Andhra mutton curry
1 . Mutton -1 / 2 kg
2 . Cumin seeds, 1/4 tsp
3 . 2 teaspoons ground turmeric
4 . Finely chopped onion - 2 our
5. Shredded coconut , 1/ 4 cup
6 . Coriander leaves , 1/2 cup
7 . Coriander powder 1 tablespoon
8 . Ginger garlic paste -1 1 /2 tsp
9 . Finely chopped tomatoes NOS -2
10 . Powder 1 teaspoon turmeric
11 . Curry leaves - 2 sprigs
12 . Salt to taste

1 . Cloves -3 our
2 . Cinnamon -1 "piece
3 . Leaves 1 - BAY
4 . 3 cardamom our
5. Cumin seeds , 1/ 2 teaspoon
6 . Fennel seeds , 1/2 teaspoon
7 . Whole black pepper , 1/2 tablespoon
8 . Whole red chillies -4 to 5 ( or to taste)
method to prepare Andhra mutton curry
• Pressure cook mutton with cumin seeds, turmeric powder , salt to taste and enough water.Cook tender.Separate up the pieces of lamb and stock and keep aside .
• Heat a pan and dry roast all the ingredients for roasting and grinding to form a fine powder. Keep aside.
• Heat oil in a pan and add 1/ 4 cup chopped onion and saute until it turns off translucent.Switch flame.Grind cooked with onion powder above the ground spices , 1/ 4 cup shredded coconut , 1/ 2 cup cilantro and 1 tablespoon coriander powder to form a smooth paste.
• Heat oil in a pan and fry the remaining until onion becomes translucent .
• Now add the ginger garlic paste and fry for a few minutes.
• Add the pieces of lamb cooked ( without the stock ) and fry for 3-4 minutes.
• Add chopped tomatoes, curry leaves , turmeric powder and salt to taste.Cook for 3-4 minutes over low heat .
• Now add the ground masala paste and cook for 10 to 12 minutes or until the oil separates .
• Garnish with chopped coriander leaves
